Peanut Butter and Banana Muffins

1 cup brown sugar
1/2 cup peanut butter
1/2 cup cauliflower or carrot purée 
1/2 cup banana purée 
1 large egg white
1 cup while wheat flower
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt 

Preheat oven to 350. Coat muffi tin with cooking spray or line with baking cups. 

In mixing bowl, mix 1/2 cup of the brown auger with the peanut butter, the vegetable and banana purées, and egg white. 

Mix the flour, baking powder and salt together.  Add to peanut butter mixture. Add remaining 1/2 cup of brown sugar. 

Bake 15-20 minutes. 

This recipie comes from the cookbook Deceptively Delicious. I don't have cauliflower at my house very often and we didn't have carrots so I didn't add those ingredients. But they're suppose to be hidden nutritious foods so you probably wouldn't taste them. I also used part whole wheat and part white flower. I also added mini chocolate chips. I didn't measure because I hardly ever measure when adding chocolate chips.

Birthdays Come Every Year.... On the Same Day

Awhile ago our four year old asked when his birthday is.
"July", I responded. 
To which he said a very surprised, "AGAIN"!?!
